Fruity Frozen Peach Bars

These bars take me straight to summer. I used fresh peaches to make the topping/filling but you can use lots of different fruits (read the recipe below). The hearty crust could also easily be turned into energy balls if you don’t feel like making a bar, so it’s a multi-purpose recipe to keep!!

Ingredients

Fruity Frozen Peach Bars
  • For the Crust:
  • 1/2 cup dried apple
  • 1/2 cup (generous) pitted medjool dates
  • 1 cup unsulphured dried apricots
  • 1 cup raw almonds
  • 5 tsp vanilla bean powder
  • For the Filling:
  • Several cups of thick fruit puree or nice cream (read instructions for more details)

Instructions

  1. Blend all crust ingredients in a food processor until desired texture. You can leave some chunky nuts if you want for extra crunch.
  2. For the filling:
  3. The filling for these bars is very straight forward: fresh peaches that I cooked down until I had very sweet reduced peach preserves. I then blended the mixture until thick and creamy. You could probably make a filling with any of your favorite no sugar added preserves but I think peach is best! Another option would be to simply blend frozen mango and peaches (let allow to thaw just enough to blend into nice cream).
  4. Press the filling down into your favorite brownie pan or anything that has a flat surface. I used a parchment paper lined cookie sheet for this batch. Just be sure that whatever you use, you create a square or a rectangle for easy cutting. Then, pour your filling on top and freeze until completely set.
  5. Cut into squares and place on serving dish. Keep frozen until you are ready to serve!
