Green Goodness Fruity Oat Bars

These fruity oat bars have the benefit of beautiful green kale to add additional nourishment and phytochemicals to a fruit sweetened snack! The could honestly be made into muffins or a thicker breakfast bar if you wanted: the recipe is forgiving! Great for adults and kids alike as a healthy way to keep energy up!

Ingredients

Base
  • Large handful of kale: enough to loosely fit into the blender (maybe 4 cups? you can't go wrong...)
  • 1 tsp vanilla bean powder
  • 2 cups organic rolled oats (sprouted is even better!)
  • 2 large ripe bananas
  • 2 cups filtered water
Mix ins
  • 2 cups organic rolled oats
  • 1-2 cups raisins
  • 1-2 cups favorite dried fruit

Instructions

  1. Pre-heat oven to 350F
  2. Blend all of the base ingredients in a blender or food processor until just a few little chunks are left in the batter.
  3. Pour into a bowl and mix in the additional oats and raisins. Spread mixture onto a 17X12 baking sheet lined with unbleached parchment paper (you could use a smaller baking sheet and they would turn out just fine, you'll just need to bake a bit longer)
  4. Top with and press in the remaining dried fruit (we like chopped apricots, raisins and goji berries)
  5. Bake at 350 for 25 minutes or until the middle isn't liquidy anymore. Pull out of oven and allow to cool completely before cutting into squares, strips, triangles or whatever you want! Store in the fridge for up to a week or so or freeze what you can't eat.
