Mango & Greens Salad with Creamy Sun Dried Tomato Dressing

Fresh Mango & Greens Salad with Creamy Sun Dried Tomato Dressing

This delicious tropical inspired salad takes the standard bowl of greens to the next level. The dressing is also delicious as a dip for fresh veggies or homemade crackers!

Ingredients

  • 8 cups finely chopped kale stem (veins removed) or any green of choice
  • 2 large or 3 small diced mangos
  • 1 julienned english cucumber
  • 3 diced roma tomatoes cut into bite-sized pieces
  • 1 small slivered red onion
  • 1/2 cup cghopped fresh cilantro
  • 1 diced avocado (wait to cut until right before serving)
Creamy Sun Dried Tomato Dressing
  • ½ cup sun-dried tomatoes
  • 1 clove fresh garlic
  • ¼ tsp italian seasoning
  • 1-2 medjool dates or 1 Tbs reduced balsamic vinegar
  • ¼ cup hemp hearts (aka hemp seeds)
  • 2 cups filtered water
  • 1 Tbs fresh minced ginger
  • 1/4 tsp red chili flakes (optional)
  • 1 Tbs miso paste if you need a salty flavor (optional)

Instructions

Salad
  1. Place chopped kale or whatever greens you are using in the base of a large bowl
  2. Prepare vegetables and mango for the salad (except for avocado- wait until ready to serve to add avocado)
  3. Add all ingredients to the bowl of kale
  4. To serve, add avocado at the last minute and drizzle with creamy sun-dried tomato dressing all over the top. Save leftover dressing for dipping veggies or even adding to pasta! or zoodles.
Dressing
  1. Combine all ingredients in a high-speed blender
  2. Blend until smooth
