I made this hash on Indy Now News and it did not disappoint. You can make this One Skillet Summer Hash Mexican or Italian Inspired depending on what spices and herbs you use and it really works with any fresh veggies that you like combined together!

One Skillet Summer Hash

Ingredients

  • 4 cloves garlic, minced
  • 1/2-1 cup finely diced red onion
  • 3/4 cup finely diced bell pepper
  • 1-2 cups precooked quinoa
  • 1 cup chopped zucchini
  • 1 cup low or no sodium vegetable broth or 1 cup water with 1 tsp miso paste dissolved into it (miso doesn't raise blood pressure but lends salty flavor)
  • 1 15-ounce can or 1 1/2 cup rinsed and drained black beans
  • 1 28 oz can fire-roasted diced or plain crushed tomatoes (unsalted)
  • 1-2 cup corn kernels, frozen, canned or roasted
  • 2 cups small dice sweet potatoes (pre-cooked)
  • 1 Tbs chili powder or italian seasoning*
  • 1/2-1 teaspoon cumin or fennel seed*
  • 1/4 cup chopped fresh cilantro or basil*
  • ground black pepper to taste
  • *you can use the chili powder, cumin and cilantro for mexican inspired or italian seasoning, fennel and basil for italian inspired!

Instructions

  1. Heat about 1/4 cup of the broth or miso broth in a large skillet over medium high heat. Add garlic, onion and bell pepper and cook, stirring frequently, until fragrant, about 1 minute. Stir in tomatoes and zucchini and cook down until tomato liquid is reduced a bit then add beans, quinoa, corn, sweet potatoes and spices (not the fresh herbs yet). Stir and heat everything through for several minutes (4-6 minutes is typically good, but you don't want it mushy). Turn off heat. Throw in the fresh herbs and stir one final time and serve. You can top with more fresh herbs if desired!
  2. Serve immediately.
