The only cupcake recipe you’ll ever need

I made these for our son Koen on his 4th birthday and these will probably be a birthday staple for the rest of his life until he is out of this house and can make his own. LOL. No sugar, oil, added salt (aside from the baking soda but am still seeking a substitute) and of course…vegan. It LITERALLY tastes like a DING DONG and let me tell you, I ate way too many of those as a kid….

These chocolate cupcakes are not only so similar to the chocolate cake that's in a ding dong, but truthfully so good that I think I would sell them if I had a production facility to do it LOL!

Ingredients

  • For the Cupcakes:
  • 1 1/4 cup organic unsweeted soymilk (we use Eden brand because it's just beans and water)
  •  1 Tbs apple cider vinegar
  • 1 3/4 cups organic gluten free oat flour (I just make my own by putting whole rolled oats in a blender)
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • ¾ cup raw cacao or cocoa powder
  • 1 1/4 cups date sugar
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla vanilla bean powder
  • ¾ cup boiling water
  • ----For the frosting:
  • 1/2 cup date paste
  • ½ cup nut butter (raw preferable for health)
  • 2 Tbs raw cacao or cocoa powder
  • 6 Tbs plant-milk (I used Eden Organic unsweetened soy)
  • 1 tsp optional vanilla bean powder

Instructions

  1. For the Cupcakes:
  2. Combine the vinegar and dairy-free milk in a jug or bowl to make a buttermilk.
  3. Whisk your dry ingredients in a large mixing bowl.
  4. Add the remaining wet ingredients to the buttermilk.
  5. Whisk the wet and dry ingredients together and add boiling water (the batter is thin, don't worry, it's supposed to be).
  6. Pour the batter in to lined cake tins and bake for some 20 + minutes or until you can press the top and it bounces back just a little (toothpick method also works)
  7. Let Cool (I know it's hard, haha)
  8. For the Frosting:
  9. Blend the date paste with nut butter, cacao powder, plant milk and vanilla powder (if using) until smooth. Wait until cupcakes are completely cooled before icing.
