Dill Marinated Beets

This recipe is so simple and absolutely delicious. Beets are incredible for your heart and a healthy cardiovascular system, not to mention a great weight maintenance food that is packed with phytonutrients and fiber. Eat this cold or warmed, on salad or as a side dish.

Ingredients

  • 2-3 cups cubed cooked beets
  • 4 Tbs balsamic vinegar (or favorite acid - lemon will work as well but won't be as sweet)
  • 2 Tbs dried dill weed (fresh can of course always be used instead if you have it)

Instructions

  1. Boil whole beets in a pot of water
  2. Once they are cooked enough for a fork to go through, drain the cooking liquid and put the beets into an ice bath (a big bowl of water with ice)
  3. Using your hands (with gloves on), peel the skin of the beets off and dice into a mixing bowl.
  4. Pour the vinegar over the beets and stir.
  5. Add the dill weed and stir again
  6. It's ready to eat right away or you can let chill overnight to have the flavors meld together. You can also optionally warm this dish up or put on top of salad. There's lots of options with these beets!
