Seriously Simple Yogurt Sesame Dill Bagels

For several years in a row, I would never go a morning without a bagel. It was super picky about it being whole grain (not a white bagel) and if it was savory flavored, all the better. I have gone through the ‘everything bagel ‘ phase in my life and have decided that I like straight sesame seeds or plain on top the best. Herbs incorporated into the dough takes this bagel to the next level and I love it.

Here’s how to make them:

Seriously Simple Yogurt Bagel

Ingredients

  • 2 cups flour of choice (these bagels will come out different textures depending on what type of flour you are using)
  • 1 tablespoon baking powder
  • 1 1/4 cup plant based yogurt
  • 1 teaspoon salt if prefered
  • 4 TBS dill weed
  • sesame seeds for topping

Instructions

  1. Preheat the oven to 350F and line a baking tray with unbleached parchment paper. In a large mixing bowl, combine your flour, spices, baking powder, and yogurt and mix well, until you have a fully combined ball of dough. Lightly grease a kitchen surface with extra flour. Place the ball of dough on top, and top with a little extra flour. Gently knead the dough and flatten it out into a circular shape. Slice into 4 even pieces. Use your hands (I dip in flour) to roll the dough into a snake shape. Join both ends of the dough to form a bagel shape. OR you can simply make a thick hamburger bun shape and poke your finger in the center to make a hole. Place on the lined tray and repeat until 4 bagels are formed.
  2. *Now, once you have your shape, you can choose to go straight into baking (I will typically let the dough rest about 20 minutes before baking) or you can drop your bagels gently into a pot of 4 cups boiling water with 1/4 cup baking soda for about 30 seconds to 1 minute to get a chewier outer coating before baking!
  3. Regardless of if you boiled the bagel beforehand or not, be sure your bagels are on the parchment-lined paper before baking for about 25 minutes or until softly browned, and there's a little spring back if you poke it. Remove from the oven and spray with water then dip into the sesame seeds. (I try my best not to cook nuts and seeds at a high temperature as studies have shown associated health risks so I typically wait to dip into my seeds until after the bagels are cooked).
