Vanilla Beet Protein Balls

These balls are so versatile and can be made into chocolate/red velvet balls depending on the color of your beets and what flavor of protein powder you use! You can also make these ultra chocolatey with cacao or cocoa powder instead of protein powder! Enjoy for easy snacking or a sweet treat after lunch or dinner.

Vanilla Beet Protein Balls

These are great snack balls for on the go or anyone wanting to live a plant-based life and wanting extra protein

Ingredients

  • 1 cup rolled oats
  • 3 peeled small-medium boiled beets (I used white)
  • 1/4 cup vegan vanilla or chocolate protein powder or cocoa or cacao powder if you don't want to use protein powder
  • 10 juicy medjool dates
  • 1/8 tsp vanilla bean powder (optional)
  • 1/3 cup almond butter

Instructions

  1. Blend the oats into a flour in your high-speed blender or food processor and set aside.
  2. Blend the beets and dates together in a food processor or high-speed blender. Add almond butter and blend. Add protein powder, vanilla powder and oat flour and blend one last time until ingredients are incorporated
  3. Roll into balls and store in an eco-friendly container in the fridge for up to two weeks or the freezer for longer storage!
  4. Enjoy!
